Recipe Swap 2008!
My recipe to share is Martha Stewart's Butternut Squash & Sage Lasagna. I made this recipe a few weeks back and now whenever we have a potluck, I get requests to make this delish dish.
It wasn't too difficult, but I definitely wouldn't say it was a piece of cake. Lots of prep (especially since I made individual dishes). But it was definitely worth all the hard work!
Butternut Squash & Sage Lasagna:
*3 1/2 pounds butternut squash, peeled, seeded, and cut into 1-inch pieces
*2 tablespoons extra-virgin olive oil
*Coarse salt and freshly ground pepper
*1 pound whole-milk ricotta cheese
*1/2 cup heavy cream
*2 large egg yolks
*1/2 pound fresh mozzarella cheese, coarsely grated (2 cups)
*Freshly grated nutmeg
*2 tablespoons unsalted butter
*1/3 cup loosely packed fresh sage leaves, coarsely chopped
*1 1/4 cups homemade or store-bought low-sodium chicken stock
*Fresh Lasagna Noodles, (you will need only 1/2 of the batch), cut into 4-by-13-inch strips and cooked, or store-bought dried noodles, cooked
*4 ounces finely grated Parmesan cheese (1 1/4 cups)
Directions:
*Preheat oven to 425 degrees. Toss squash, oil, and 1 teaspoon salt on a baking sheet. Season with pepper. Bake until light gold and tender, 25 to 30 minutes. Let cool.
*Reduce oven temperature to 375 degrees. Combine ricotta, cream, yolks, mozzarella, and a pinch of nutmeg in a medium bowl. Season with salt.
*Melt butter in a small saute pan over medium-high heat. As soon as it starts to sizzle, add sage, and cook until light gold and slightly crisp at edges, 3 to 4 minutes.
*Place squash in a medium bowl, and mash 1/2 of it with the back of a wooden spoon, leaving the other 1/2 in whole pieces. Gently stir in sage-butter mixture and stock. Season with salt and pepper.
*Spread 3/4 cup of ricotta mixture in a 9-cup baking dish. Top with a layer of noodles. Spread 1/2 of the butternut squash mixture over noodles. Top with a layer of noodles. Spread 1 cup of ricotta mixture over noodles. Repeat layering once more (noodles, squash, noodles, ricotta). Sprinkle Parmesan over ricotta mixture.
*Place baking dish on a rimmed baking sheet, and bake until cheese is golden and bubbling, 30 to 35 minutes. Let stand for 15 minutes before slicing and serving.

Song Of The Week: Santa Baby
Since I was a little girl I have always loved Santa Baby by Madonna at the Holidays. Her voice is just too cute and pouty and it is one of those songs I can (and do) listen to over and over every Christmas time. I know that there are many other versions out there but I will argue that this is the best version yet.

Last but not least, light Creamy Nutmeg candle together with Illume's Eggnog Latte candle and you may just skip out all together on that run to Starbucks, as these two are sure to please you just fine!
All these scents have my nose working over time and I don't really mind at all!

'Tis The Season
Now we all know that the holidays are about spending time with family and friends, and not so much about actual "gifts". However, I have always been one of those people who gets so excited to give presents (even if only to myself). That being said, I started the Holiday Season with a present to myself...these incredible Dolce Vita Snakeskin Covered Platform Pump. I just had to have them, and I figure I can get a lot of use out of them this season and the next. But this is the last present to myself until after Christmas....once those incredible after Christmas Sales hit I can't contain myself for long.

It just wouldn't be the holidays to me if I didn't listen to this song at least 50 times! Mariah Carey's All I Want For Christmas Is You has definitely withstood the test of time and even though it is relatively a new song (1994) it has become quite a Christmas/Holiday classic. Whether it is watching that cute girl sing it in Love Actually, listening in my car or hearing it at the mall for the 10th time that day...all I want is this song!!

Favorite Thanksgiving Episode Ever!!
My friends and I have adopted our own "Friends" Thanksgiving since relocating to California. We do it "Pot Luck Style" and end up drinking, talking and laughing a lot. We also often watch or talk about our favorite Thanksgiving Episodes of Friends. My ABSOLUTE favorite episode of Friends that also happens to be a Thanksgiving episode is "The One Where Ross Got High". I almost always cry watching it...The Trifle, Phoebe's love for Jacque Cousteau, the drugs and divorce. SOO funny!

Song Of The Week: The Thanksgiving Song
I can't think of a more inappropriate song to celebrate Thanksgiving but I absolutely ADORE Adam Sandler and always laugh whenever I hear this song. His random lyrics, baby voice and of course his little giggles at his own funnies - are all just too great not to listen every Thanksgiving.
So give it a chance and go ahead and listen (perhaps not at work though...), I am pretty sure that you will be 100% happy you did!

I had a wonderfully, lovely weekend in San Diego and had much to be happy for...the Cougs beat the Huskies in double overtime with a 37 foot field goal, drinks and laughs with girlfriends Saturday night and a 3-Day work week.

Smack it Up, Brine It, Rub it Down...Oh No...
Also on my list to try this year is the Smokehouse Turkey Rub on the outside of the birdie. A blend of "all-natural Mediterranean sea salt is slow-smoked over Pacific Northwest apple wood, then blended with imported thyme and sage. A touch of sugar gives it the perfect savory-sweet balance" sounds just dandy to me!
So whether this is your first time cooking a bird by yourself or you want to mix it up this year, I am sure either of these options is sure to bring folks coming back for seconds!

Wino Wednesday: Beer Me!!
Samuel Adams Winter Lager is a dark and hearty beer. I am not generally a fan of dark, amber beers at all. However, I tried this tasty treat a few years back and I always pick up at least a 6 pack every holiday season. It is dark without being heavy, but I must warn you that the alcohol content is higher on this beer then I am used to, and they will catch up to you fast.
So, mix it up and try this one out, it won't be around for long and once it's gone, you will have to wait until next year to enjoy it again!

Open Letter to Williams-Sonoma
I am quite a fan of your store. It fills me with such delight each time I step inside and sample all sorts of goodies. You have a wonderful array of tasting salts, Sprinkles cupcake mix and cocktail mixers. All in all, I always leave your store quite satisfied.
However, this past Saturday evening I was frustrated to learn that you have replaced the ever lovely Spiced Chestnut Hand Soap and Lotion with Pumpkin Spice this year. While the Pumpkin Spice is very nice, let me assure you that it is NO Spiced Chestnut my friend.
I think the Pumpkin Spice is a wonderful addition to your holiday scent selection, but would like to recommend doing as Justin Timberlake suggests and bring "Spiced Chestnut back" - yeah.

Another Tube, Another Day....
It glides on very nicely and provides great coverage. I like it for my everyday use mascara. For work it is fabulous. I also liked that it had an actual brush versus these crazy plastic things all over the market. This mascara is however, not so good for watching movies that make you cry. I think I laughed so hard that I cried recently, and this mascara was literally running down my face. Not so hot. Also, for going out, I would opt for another choice. I think you would need to brush on about three coats to get the desired look or what they advertise.
On a scale of 1-10 I would give this guy a 7. Don't worry...I still have three tubes to review at home...I have a bit of an addiction, yes I know....
Song Of The Week: Sex on Fire
Perhaps I have been in my own La-La land for too long because I had NO idea who the Kings of Leon were. I kept hearing their name over and over and finally about three weeks ago I finally heard "Sex on Fire" on 98.7. I liked it alright, and didn't think much of it again until last weeks episode of Gossip Girl. The song sounded even more amazing to me and I immediately purchased Only by the Night and Because of the Times.
I enjoy walking Waldo in the wee hours of the morning to this song, and then jamming out at home and in the car as well. It is sexy, and energizing.
What are your thoughts?! Love it or leave it?

Song Of The Week: You Won't Find This
I will admit it, I love American Idol. I have watched every season and am pleased most with Kelly Clarkson and Carrie Underwood. Both of these women are beautiful, strong, fun women who seem very normal and down to earth. I love all of Carrie's fun, catchy songs but am most impressed lately with You Won't Find This off her Carnival Ride album. Her voice is amazing and the lyrics are beautiful and eloquent. Enjoy :)

The Wedding by Danielle Steel Review
Unfortunately the book was just dull, dull, and dull. The main character was Allegra was fine and dandy but 517 pages of the same thing over and over was just too much for me to handle. It wasn’t trashy at all (barely any “romance” scenes), and I felt like I was reading the same adjectives paragraph after paragraph. The book read like an after school special, problem arrives, problem solved, everyone happy…minus this reader who was bored out of her mind.
The only part of the book that made me laugh (seeing as the book was written in 2001) was the description of the wedding dress...
"Allegra and her mother went shopping at Dior, and they ordered a dress that Mr.Ferre was apparently willing to have slightly readjusted to suit Allegra. It was white pique, with a white lace overlay. It was short in the front, long in the back.And he was going to add a short, high-necked, long-sleeved white lace jacket.It came with a huge white lace picture hat, and it was exactly what Allegra had in mind for her wedding. It was elegant, young and exciting!"
Quite a vision of a dress if you ask me. I have always hoped my wedding dress would have the same description as a mullet.
Now that summer is over, I can get back to reading books that are far more interesting. My summer experiment with trashy novels was a failure and I can officially say that romance novels are not for me. While I would consider reading another Jackie Collins novel, Danielle and I are sooo DONEZO.
Next book on the list…Stori Telling by Tori Spelling. CAN’T WAIT!!

Happiness Is....
First off, last week I was asked by Darci at With This Ring if I was interested in being a guest blogger while she was away getting married. My answer of course was an enthusiastic "YES!!!" Darci provided me much inspiration in my wedding planning, and her creativeness never ceases to amaze me. Congrats to Darci, and thank you for allowing me to be apart of your amazing blog!!
