Song Of The Week: Safe And Sound

my current feel good song that instantly snaps me out of any funky mood i may be in is capital cities "safe and sound"

it's uplifting, energizing and hard to frown at when listening to.  i am thinking they may be added to the list of bands to see this summer.  they will be here in l.a. in june.  very tempting...

in other news, i bought tickets to see the postal service in july at the greek with b and i am soo excited!!

Happy {April Showers, Bring May Flowers} Weekend!

holy cow the last weekend of april came fast.  while i am sad to see april go, i am very excited about all the fun weekends ahead in may!
this last weekend will be filled with exercise, sunshine, organizing and who knows!
have a fabulous last weekend of april!

Make This - Quinoa Black Bean Casserole

(instagram @lyndsylee)
brandon and i take turns making dinner for our date nights and last monday it was my turn.  b's only request was something healthy.  thank god for pintrest!
off to my trusty recipes to try board i went, and came across this recipe for quinoa black bean casserole.  healthy, gluten-free and with a touch of cheese sounded too good to be true.  turns out it really does exist!
the recipe is so easy (minus the grating of the sweet potato which was awful) to make and turns out an amazing smelling, delightful tasting casserole that leaves enough leftovers for a few additional lunches.
i served it up with some aidells pinapple bacon chicken sausage and a cranberry spinach salad with poppy seed dressing and both of our plates were empty in no time at all.
bon app├ętit!
    *1 cup cooked quinoa
*3 cups cooked black beans (or two
    15-ounce cans, drained and rinsed)
    *2 large sweet potatoes, shredded
*1 cup shredded low-fat cheddar cheese
    *1 tbsp ground cumin
    *liberal pinches salt and pepper
    *2 eggs
*1 cup salsa (i used trader joes serrano salsa - gave it a nice bite)
*2 tbsp fresh cilantro, chopped, for garnish

1. preheat oven to 350° F. Prepare a 9” x 9” casserole dish with nonstick cooking spray.
2. in a large bowl, mix together the quinoa, black beans, sweet potato, 1⁄2 cup of the cheese, and the cumin, salt, and pepper. In a small bowl, mix together the eggs and the salsa. Pour the salsa mixture over the quinoa-bean mixture, then pour everything into the
prepared casserole dish.
3. sprinkle the remaining cheese over the top and bake, uncovered, for 30 minutes. Garnish with the cilantro.

Song Of The Week: Can't Hold Us

new favorite running song.  period.  "can't hold us" by Macklemore & Ryan Lewis totally jacks me up and i'm pretty sure it makes these short little stubs run just a little bit faster.  so good!

not sure if i mentioned it to y'all but i signed up for the revlon run/walk for women los angeles 5k and have committed to running the entire thing.  now i realize that 5k may not be a lot to some of you, but for me, this will be the longst continuous run i have done...ever.

if you live in los angeles, it's not too late to register and join in on the fun, or if you live outside of la and want to donate (and help me reach my goal of $1000) please click here (even $5 helps!).

happy monday friends!

Happy {Safe} Weekend!

what a week.  with the sad events in boston and a wacky week at work, i am ready for a weekend to relax and appreciate the good stuff surrounding me.
my thoughts go out to all those who have family in boston living in a state of fear.
hugs to all.

Forever Frugal Friday

i love white tops.  like seriously love.  so when i saw this adorable peplum eyelet top at forever i absolutely swooned.
i doubt i will be wearing it without anything underneath, but love the sweet, yet naughty aspect of the top.  the perfect bright white top for spring!

Word Up Wednesday

seriously don't let them.

oh so true.

i hope so!  i did cw on saturday with my gf christy, yesterday with samela and today vipr with lori & avery.  good mood here i come!
happy hump day!

Song Of The Week: Car Song (Feat. Santigold)

"car song" by spank rock is another great summer jam.  while i have never heard of spank rock before but am very familiar with santigold (i adore her voice so much) so i had a feeling i would like it.  feeling confirmed.

Happy Weekend!

yahoo for friday!  this week has been a busy one at work and i am looking forward to the weekend more than usual.
tonight i'm heading out to celebrate sweet kimi's b*day, tomorrow morning i've got circuit works brentwood with my fresh from paris gal pal christy, a much overdue haircut (still no idea what i am doing to it) and a night out to fully maximize the great blowout i receive.
sunday, i will begin to attack my closet.  organize, organize, organize.
wishing y'all a fantabulous weekend full of sunshine and smiles!

Lusting Lately ~ Spring 2013

this zara leather jacket w/ ruffle detail is incredible.  it's the perfect color for spring, with just the right feminine touches - peplum, ruffles and zippers oh my!
i heart this rebecca minkoff m.a.c. shoulder bag.  i love the camel contrast with the navy print.  it screams spring fun.
my gf cari was wearing these celine sunnies last week and i made the mistake of trying them on, and falling massively in love.
i love pretty much anything dvf puts out, and these opal wedges are to die for.  rose gold strap, cream crisscross and wood wedge, i heart them so much!
i heart one of these items so much, i did a bad, bad thing and purchased it.  not for the price listed, but still, quite a luxurious purchase for this girl.
any guess what that item was?  be sure to check out my instagram (@lyndsylee) later next week to see!
what luxury items are you craving this spring?

Song of the Week: Sweater Weather

i cannot stop groovin' to the neighbourhood's "sweater weather".  it gets me in the mood for summer (i realize spring has just sprung) and makes me want to cruise down the pch with my sunroof open and watching the waves crash by.

Happy Weekend!

wowza!  it's already april?  how in the world did that happen?
i am officially all moved into the new abode and couldn't be more excited.  the only issue is our new couch and love seat will not be ready for another 6-8 weeks so the place is looking a little empty (sans the boxes we still have to unpack) but i have to admit it is feeling a little more like home every day.
this weekend i need to find homes for all the shits and giggles, get some shelves up, find some artwork for the walls and enjoy my gf iona who is visiting from amsterdam.
wishing you all a lovely first weekend of april!

Forever Frugal Friday ~ Steal vs. Splurge

if you like these archer sandals by dolce vita for $68.95, you will LOVE these even more...

forever 21 is currently selling these almost identical metal-trimmed thong sandals  (except in price) for $16.80!  for the price of one dv sandal you can get three!  i may not be a genius when it comes to math, but i know a good deal when i see one, and this my friends is a great deal!

Gap Goodies ~ Spring 2013

my gf samela and i popped into the gap at lunch yesterday and let me just say thank gosh i accidentally left my wallet on my desk or i could have done some major damage there.
spring has officially sprung at the gap and the store is filled with brights, florals and all things sunny.
my current lust list includes this shrunken boyfriend gingham shirt (with some white jeans), this animal print scarf (which is light and soft and perfect for spring), these rose blush leather flip flops (in every color - seriously they are the best flip flops EVER) and this roll-sleeve pocket shirtdress (in active yellow).
i only ended up bringing this  harbor jersey striped dress home with me (a steal of a deal at $30 including tax) but am hoping to stop in tomorrow (with my wallet this time) and pick up a few of the items above.

Full Heart

my heart is full of happiness, joy and relief.
i found out this past weekend that my girlfriend karah is officially cancer free!
it is the kind of news that makes you smile and cry at the same time.  it's the kind of news that reminds you of whats really important and to stop stressing over the little things (like the massive amounts of boxes i still have left to unpack) and really get out and enjoy everyday as well as every one in your life.
full heart.
